Bienvenidos Amigos! Welcome to Agave Gill. We are very pleased that you have found our "little hole in the wall".
We strive daily to use the freshest and highest quality ingredients available. We do offer a selection of vegetarian alternatives to please your palate.
Although as in most authentic Mexican food the heart of all of our dishes are our meats.
Special attention is placed on them.
The U.S choice inside beef rounds, are marinated with love for 24 hours with chilies, then mesquite "hot" smoked and braised in the oven for another 4 hours.
The Pork loin is prepared the same way except with a traditional Yucatecan Annatto seed (Achiote) marinade.
The whole chicken is gently poached in a natural stock, shredden and quickly seared on a hot grill.
